鳳凛のこころ 誕生秘話
In 1966, a restaurant in Ogori, Fukuoka Prefecture, became the first in Japan to serve tonkotsu ramen with a chili-based tare. It became known across the country as the birthplace of this distinctive style of ramen. People travelled from all over Japan to taste it, forming queues outside the restaurant. Eventually, the demands of running the busy restaurant took a toll on the founder’s health. To the disappointment of its customers, the restaurant closed.
To bring back the founder’s flavours, I worked with him to establish Ramen Restaurant HORIN. My goal was to carry on his original taste and his approach to making ramen. Exactly ten years after the restaurant’s closure, we made a fresh start under a new name. We prepare our broth and tare by hand every day, making small adjustments according to the season and the weather.
Our pure tonkotsu broth is light on the palate, with a gentle flavour. This broth grew out of the founder’s study of Japanese cooking and his wish to make ramen that everyone could enjoy, from children to older generations. We strive to make a bowl with lingering umami, a flavour you remember and want to return to. We invite you to enjoy the taste we developed together with the founder, served with the chili tare he pioneered in Japan.
